Smoke House:
The oven is an Alkar 8 truck. We were using it for making jerky, so there are 6 oversized - 19 tier roll-in trucks that hold screens that are 48" x 54" (oven is set up for rails). There are 135 stainless steel screens. The oven runs on propane or natural gas, has oscillating dampers, a 30 hp 2 speed blower, six stage pneumatic controls, plumbed for steam and humidity, natural or liquid smoke. The oven is double-walled welded stainless steel. The burner is a Maxon 1.2 million btu's.
